Easy Banana Cake Recipe

Credit to Savor Easy's Video Tutorial on YouTube, I recreated my version of this easy Banana Cake recipe with variations, including adding Dark Brown Sugar (Muscovabo sugar) to bring in more complex molasses flavours. Instead of using entirely vegetable oil (140 g), I split it into Olive Oil (120 g) and Unsalted Butter (20 g) to add a hint of buttery taste.

Ingredients

  • Banana --- 3 pcs
  • Egg (Large) --- 2 pcs
  • Caster Sugar --- 100 g
  • Dark Brown Sugar --- 20 g (If not available, make Caster Sugar a total of 120 g)
  • Olive Oil --- 120 g
  • Butter (Unsalted) --- 20 g
  • Milk (Semi-skimmed) --- 100 ml
  • Yogurt (Plain) --- 35 g
  • Vanilla Extract --- 1 tsp
  • Table Salt --- 1/2 tsp
  • Plain Flour --- 190 g
  • Baking Powder --- 1 tsp
  • Baking Soda --- 1 tsp

Instructions

First of all, I would give my full credits to Savor Easy's Video Tutorial on YouTube which made up most of my version of banana cake recipe.

My variations include adding Dark Brown Sugar (Muscovabo sugar) to bring in more complex molasses flavours. Instead of using entirely vegetable oil (140 g), I split it into Olive Oil (120 g) and Unsalted Butter (20 g) to add a hint of buttery taste.

  1. Preheat oven at 170ºC(340ºF). Mash 3 overripe bananas, set aside.
  2. Beat together eggs, sugar and oil until light and fluffy.
  3. Add milk, yogurt, vanilla and salt. Mix well.
  4. Sift in flour all purpose flour, baking powder and salt. Mix until no lump is visible. Do not over mix.
  5. Add mashed bananas. Mix just until combined.
  6. Grease an 8 inch pan and line with parchment paper. Place batter in the pan.
  7. Bake in a preheated oven for 35 to 45 minutes or until toothpick comes out clean when inserted.
  8. Let it cool down for a while. Transfer to a serving plate.
